
When I first started looking for a houmous recipe, I noticed that most had the same combination of ingredients, but varied widely in terms of proportions. I made it my business to create the ultimate taste/texture balance – and here it is! You’re welcome.
Ingredients
- 1 can chickpeas, rinsed and drained
- 2 large tablespoons tahini
- 2-3 cloves garlic, chopped
- juice of 2 medium lemons
- 3 tablespoons olive oil
- 1/2-1 teaspoon ground cumin
- 1/2-1 teaspoon paprika
- 1 pinch cayenne pepper (or go for 1/2 a teaspoon if you like it spicy!)
- 1 1/2 teaspoon salt
- black pepper to taste
Method
Whisk together the tahini, lemon juice and oil with a fork in a bowl. Use a hand blender to blend in the chopped garlic and spices. Add 3/4 of the chickpeas and blend until smooth, then blend in the rest briefly, leaving some texture. Et voila!
This is a good recipe to use as a basis for experimenting with flavoured houmous – try incorporating different spices or ingredients like sundried tomatoes or olives.
