
This recipe is based on Lucy Watson’s, found in her book Feed Me Vegan. These burgers have a delicious flavour and the mixture binds together well.
Ingredients (makes 4)
- 2 medium sweet potatoes
- 3 tbsp olive oil
- 100g walnuts
- 2 400g cans black beans
- 3 tsp smoked paprika
- 1 tsp Italian herbs
- 2 garlic cloves, chopped
- Salt and black pepper
Method
Peel the sweet potatoes, slice them into chunks and place them on a baking tray with the chopped garlic. Drizzle with oil and sprinkle with salt, then cook on the top shelf of the oven for 40 mins until soft and slightly crispy.
Chop the walnuts into pieces and toast them in a small pan. Blend the black beans together in a mixing bowl, retaining some lumps, then stir in the walnuts, paprika, herbs, salt and pepper.
Remove the sweet potatoes from the oven and mash them with a fork. Add to the mixing bowl and stir into the bean mixture.
Divide the mixture into 4 parts, shape into burgers and cool in the fridge for 10 minutes. Preheat the oven to 200 degrees Celsius and line a baking tray with greaseproof paper. Place the burgers on the tray and bake for 35-40 minutes, flipping them half way.
Serve in burger buns with salad leaves and ketchup. Guacamole is also a nice addition.
