
Ingredients (serves 6)
- A dash of oil
- 1 onion, chopped
- 2 sweet potatoes, cubed
- 2 red peppers, chopped
- 1 chilli, chopped
- 1 tsp fresh chopped ginger
- 1 tsp turmeric
- 1 tsp ground all-spice
- 1 tsp cinnamon
- 1 tsp ground ginger
- 1 can coconut milk
- 3 plantain, in large slices (any ripeness)
- Salt and pepper
- Serve with rice and sprinkled with coriander
Method
In a large, deep pan, heat the oil and add the onion. Caramelise for 10 mins.
Add the potatoes, pepper, chilli, ginger and spices. Mix well to evenly spread the vegetables and spices.
Pour in the coconut milk, cover with a lid and leave to simmer for 10 mins.
Add the plantain and cook for 10 mins more. Greener plantain should be added sooner to allow it to soften and sweeten, while more yellow/black plantain only need to be cooked for 5 mins.
Salt and pepper to taste. Sprinkle with coriander and serve with rice.
