
This is a salad for one in a glass jar with a lid, which makes it ideal for a take out lunch.
Ingredients:
- 6 cherry tomatoes
- 1 red pepper
- 2 handfuls of lamb’s lettuce
- 1 carrot
- 10 blueberries
- salad cress and/or chopped chives
- 1 tsp mixed seeds
Ingredients for dressing:
- 1 T balsamic vinegar
- 1 tsp Dijon mustard
- 1 tsp olive oil
- 1 tsp maple syrup
- salt
- freshly ground pepper
Method:
- Wash all the fruit and vegetables and then halve the tomatoes, cut the pepper into small pieces and peel and slice the carrot thinly.
- Make the dressing by combining all the dressing ingredients.
- Put all the vegetables layer by layer into the glass and top with the salad cress and/or the chopped chives. Sprinkle on the mixed seeds.
- Pour on the dressing just before you eat the salad. Enjoy!
