Rainbow Salad (V)

This is a salad for one in a glass jar with a lid, which makes it ideal for a take out lunch.


  • 6 cherry tomatoes
  • 1 red pepper
  • 2 handfuls of lamb’s lettuce
  • 1 carrot
  • 10 blueberries
  • salad cress and/or chopped chives
  • 1 tsp mixed seeds

Ingredients for dressing:

  • 1 T balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 tsp olive oil
  • 1 tsp maple syrup
  • salt
  • freshly ground pepper


  • Wash all the fruit and vegetables and then halve the tomatoes, cut the pepper into small pieces and peel and slice the carrot thinly.
  • Make the dressing by combining all the dressing ingredients.
  • Put all the vegetables layer by layer into the glass and top with the salad cress and/or the chopped chives. Sprinkle on the mixed seeds.
  • Pour on the dressing just before you eat the salad. Enjoy!
