
Ingredients:
- 3 T olive oil
- 100g pine nuts
- 1 onion, finely chopped
- 1 clove garlic
- 225g mushrooms, finely chopped
- 3 cups of fresh breadcrumbs
- 2 tsp dried thyme
- a little water/oat milk to combine
- salt and freshly ground pepper to taste
Grease an oven proof dish with olive oil and set the oven at 200 degrees celcius.
Make the breadcrumbs and leave to the side in a large bowl.
Toast the pine nuts separately in a small frying pan.
Fry the onion in the oil for 5 minutes until it begins to soften. Then add the garlic and mushrooms and cook until everything is browned. Add the dried thyme and seasoning.
Add the pine nuts and mushroom mixture to the bread crumbs and combine well. Add a little oat milk or water to moisten the mixture slightly.
Put the stuffing in the greased oven proof dish and pop in the oven on a high shelf for about 20 minutes at 200 degrees celcius to brown.
