Onion Gravy (Vegan)

This is my favourite vegan gravy recipe. If you run out of soya sauce, a teaspoon or two of marmite works surprisingly well as an alternative. I double the recipe most of the time, as you can never have too much gravy.

Ingredients:

  • 2 onions, finely chopped
  • 2-3 cloves garlic, finely chopped
  • 2 T olive oil
  • 1 tsp sugar
  • 2 T flour
  • 2 cups water
  • 2 T dark soya sauce
  • salt and freshly ground black pepper to taste.

Sautee the onions in the olive oil until they are browned, adding the garlic towards the end. Stir in the flour and sugar and then add the water and soya sauce, stirring continuously with a whisk to avoid any lumps of flour. Bring to the boil and reduce to a gravy-like consistency. Season and serve!
